This is my favorite hummus. It can serve as a dip or a spread for sandwiches. I use it with Tuna Salad, Egg Salad, and it was great after Thanksgiving complimenting my leftover turkey sandwiches.
- 1 – 15 oz can Garbanzo beans (drained & rinsed)
- 1 large avocado
- 1 clove garlic
- 2 tablespoons cilantro
- 2 tablespoons lemon juice
- 2 tablespoons water
- 1 tablespoon extra virgin olive oil
- 1/4 teaspoon salt (kosher if you have it)
Combine all ingredients in food processor and blend until well incorporated. If if seems too thick, add extra water or evoo.
This will make approximately 1 1/2 cups.
