Tomato Basil Soup

3  T olive oil

1 medium yellow onion – chopped

6 – 8 cloves garlic – minced (depending on size and how garlicky you want it)

2 – 28 oz.  can crushed tomatoes

1 – 14 oz can chicken broth

1 ½ t salt (or to taste)

1 tsp pepper

1 – 2 tsp sugar

¼ tsp crushed red pepper flakes

1/3 cup chopped fresh basil –  (I get the large container of basil at the store and put in all of it.  Not sure how many ounces it was, but I didn’t use the real thin container sold by the bagged salads (if that is all they have then get 3).

½ cup heavy cream

Shredded cheese for serving

 

Heat olive oil – add chopped onion and minced garlic.  Saute until soft.  Add in tomatoes, chicken broth, salt, pepper, sugar, red pepper flakes and basil.

Bring to boil, then reduce heat and simmer for 45 min to 1 hour.   Add heavy cream.

I freeze this in containers and take to work for lunch!
